Hummus is a part of my daily diet, and I’m constantly looking for new ways to enjoy it. One of my favorites? Spicy, tangy, and creamy Buffalo hummus! 

My husband grew up in Buffalo, New York, meaning Buffalo sauce is a staple in our kitchen. We always buy Anchor Bar brand sauce that we get from Buffalo and cherish each and every bottle. Strangely enough, it is rarely used on buffalo wings in our house, but instead on pizzas, dips, salads, and cauliflower.

This recipe for Buffalo hummus blends spicy Buffalo sauce, creamy tahini, smoky paprika, and chickpeas into a flavorful dip that will take you from afternoon snack to tailgate hit.

How to Make the Best Hummus

Hummus lovers will tell you that starting with dried chickpeas will yield the best results, but if you’re short on time (like me!), you don’t need to spend an entire day soaking and boiling chickpeas. A can of chickpeas and these tips will get you to creamy, smooth hummus in no time: 

  • Blend, then blend some more. Think it’s smooth enough? Think again! Purée hummus for at least 4 to 5 minutes.
  • Try a quick boil. For extra creamy results, boil canned chickpeas in 2 cups water and 1/2 teaspoon baking soda for 15 minutes. This will help break down the chickpeas for extra smooth hummus.
  • Peel the chickpeas. Peeled chickpeas yield the smoothest hummus, but it can be time-consuming! I prefer the quick boil method for nearly identical results.
  • Keep it fresh. Use freshly squeezed lemon juice for the tastiest hummus—bottled lemon juice just doesn’t compare.
  • Use ice water. Add ice water 1 tablespoon at a time while puréeing for silky smooth, fluffy hummus.

The Case for Homemade Hummus

Store-bought hummus is great in a pinch, but there’s nothing like homemade. Pre-made hummus often replaces olive oil and tahini with lower cost and lower quality ingredients while charging you more. Homemade hummus is customizable, budget-friendly, and comes together in under 10 minutes.

Choosing a Buffalo Sauce

This recipe relies on Buffalo sauce. Buffalo sauce is a cayenne pepper-based sauce made with butter, vinegar, Worcestershire sauce, and garlic powder. You can find Buffalo sauce in mild, medium, and spicy varieties, in the sauce and condiment section of your supermarket. 

If you prefer a more mild spice level, use mild Buffalo sauce. I prefer medium Buffalo sauce and my favorite brand is Anchor Bar Medium, but Primal Kitchen or Frank’s Hot Sauce also works great.

How to Serve Buffalo Hummus

Serve this spicy Buffalo hummus topped with crumbled blue cheese and extra Buffalo sauce. When it comes to dipping, serve crunchy celery or carrot sticks for a classic combo, pita chips, or your choice of crackers or chips. Or try spreading it in a chicken wrap or sandwich for a burst of flavor.

Buffalo Bonanza

Blend the ingredients:

Combine the chickpeas, garlic clove, 3 tablespoons Buffalo sauce, tahini, lemon juice, and smoked paprika in a food processor or blender. Blend until smooth.

Keep blending:

With the food processor running, add 1 to 2 tablespoons of ice water, as needed, to achieve the desired consistency. Keep processing for 3 to 5 minutes until the hummus is very smooth and creamy. Taste, adding salt or more lemon juice if needed.

Add the garnishes:

Transfer to a bowl and top with blue cheese crumbles and drizzle with the remaining tablespoon of Buffalo sauce.

Serve with celery sticks, carrot sticks, and/or pita chips for dipping.
